Happy Wednesday! This is a short week for us since we had Monday off for President’s Day so I’m glad we’re already halfway through the week now.
What We’re Eating This Week
This chili is the best. I’m pretty sure I’ve made it every single weekend for the past month now. I found the recipe on Pinterest awhile back but it wasn’t until recently that I started to make it on a regular basis. It’s only two chicken breasts, can of corn, can of black beans (rinsed), can of Rotel, packet of ranch dressing mix, onion powder, cumin, and chili powder. Shred the chicken & add the cream cheese to it about an hour before serving. I add extra tablespoons of each of the spices than the recipe calls for which gives it a little more kick. I made a batch on Monday for a few dinners this week.
I’m still on a huge Kodiak Cake kick these days. I buy their regular mix and add my own peanut butter to it. Then I top them with some cookie butter. SO GOOD.
What I’m Reminiscing About
Last week, TimeHop reminded me of the time that we all went out for Fat Tuesday in 2010. Anytime we get together, we still talk about this night! I’ll never forget the guy who told me I looked like I was going on a safari because I was wearing a zebra print top & had a zebra print wristlet. #jerk.
What I’m Loving
New spring styles hitting the stores right now. It is so hard for me to control my urge to shop & desire for new clothes/shoes at the beginning of each season. Please tell me I’m not the only one with this problem! Target just had 25% off so I ordered a new pair of sandals & this lace up tank. I’m also loving a lot of things at American Eagle (this tank, this one too) although I haven’t shopped there in years!
I’m still keeping up with the cycling classes on Monday & Wednesday evenings which I love. A lady that also goes to the class explained it perfectly– you can show up, sit on the bike, and just kind of zone out for awhile (obviously you have to pay attention to the instructor when he’s yelling RPMs). You don’t have to count anything or remember a list of workouts to complete during a set time. After a long day at work, it’s nice to shut my brain off for 45 minutes.
What We’ve Been Up To
This past weekend, we participated in Trek Up The Tower! Curtis finished in 8 minutes 55 seconds while I finished in 9 minutes 7 seconds. Check out my race recap here.
Last week, we got to dog sit for the lady that adopted Luna, our first foster pup! She stayed with us from Sunday night until Thursday night and it was so awesome to have her back again. Sophie didn’t care for her too much & she was pretty stressed out the entire time. Even after Luna left, it still took awhile for her to relax again.
My niece turned 1 earlier this month which is so crazy to think about! We spent last Sunday in Wahoo celebrating with Kelsey & the rest of their family.
What I’m Dreading
Sophie goes in for her second & third heartworm shots next week. While she did awesome with the first one, they will do these back-to-back so it might be harder on her. At least she will be halfway done with her treatment & hopefully heartworm free!
After several days of some amazing weather, it’s about to take a turn & get really cold starting tomorrow. I always feel a shift in my mood on the nice sunny days so I am definitely dreading freezing cold temps & possible snow again.
What I’m Working On
I was doing really well with Swagbucks right around Christmas but fell off the wagon shortly after. I’m not able to earn hundreds of points every day like some people but every little bit helps!
Trying to get Sophie back to normal after her week with Luna. After 2 1/2 months of being perfectly fine in her kennel at night, she decided that she hated it & would bark her head off as soon as she went in. We caved and let her sleep in our bedroom since it was during the week & we both had to work. This was kind of a bad idea since she got used to sleeping near us so now we are trying to get her back to sleeping in her normal spot in the kitchen.
What I’m Excited About
I mentioned this in my Friday post but I am SO excited for the Metallica concert! And getting to explore St. Louis for the first time ever. I hate to wish time away but can it be June now?
What I’m Watching/Reading
Right now, nothing. I just finished reading Small Great Things by Jodi Picoult and don’t have anything coming up on my hold list at the library.

An old t-shirt & shorts. You really won’t find me wearing anything different in the evenings after work!
What We’re Doing This Weekend
As of right now, we have nothing planned. The past few weekends have been pretty busy so it will be nice to just relax. I plan to start tackling our guest room as it is where I keep my clothes + get ready in the mornings. I feel like I have accumulated far too many clothes lately so it’s time to go through everything.
What I’m Looking Forward To Next Month
As much as I claim to dread my birthday each year, it’s still kind of exciting. I’ll be 29 so I need to make this final year of my 20s a good one. I’ve been thinking of things I want to accomplish this year & it’s already almost March so I need to get going!
We are attending a surprise birthday party next weekend with some friends & should be a lot of fun!
What Else Is New
This probably doesn’t seem like much but we finally replaced the curtains in our living room that were left behind by the previous owners. They had these disgusting brown curtains that we’ve just kept up only because I hate shopping for curtains. Like hate it so much that it makes me angry, haha.
Bonus: What Is Your Favorite Beauty Product?
Self tanner, hands down. I am super fair skinned & feel so much better with some color so I use it on a regular basis. Right now, I’m using Tanwise spray and Banana Boat lotion (I mix the two together).
